I'm flattered to be added as a friend! Flattery will get you everywhere with me; although I'm not sure what it means to be a "friend" electronically.
I'm in the process of moving, and this site takes up a lot of my little extra time. So, I've only entered (I think) 1 recipe so far: Not French Toast. Hopefully when the move is complete I'll have my already-computer-entered recipes available again. Then I'll have a couple hundred to share! Note that all MY recipes will be sugar-free, and less than 15 carbs per serving. Most are VERY LC. Some might be more 'strict' than what you are looking for, as I feel free to use LC specialty products in order to avoid even tiny amounts of carbs. For instance I use gums instead of cornstarch. Or riced cauliflower instead of rice. Or cabbage for noodles. I mean, what I'm trying to say, is that even if the recipes seem extreme to you, you'll get good ideas on how to avoid carbs just by browsing them.

But all that will come whenever I manage to actually get moved in!

Good luck on managing your diabetes. I have a friend who has that problem, so I understand some of what you face. Low carb has worked for her; she's lost and kept of a lot of weight, and needs no insulin now. Even so, she doesn't need to be as strict as I do about carbs! So I think you've made a good choice by low-carbing!

Good luck on managing your diabetes and congrats on taking the right steps. My husband has diabetes and sometimes I worry that I am getting it, and I can only imagine what a pain it must be to track and record and modify everything. emoticon
