This sounds great! How long and at what temp do you bake them. Do you bake them frozen or do you have to thaw them first?

Don't be too envious of the garden, in addition to all the veggies that big fat garden also gives me blisters/caluses on my palms, permentally blackened feet, a farmer's tan that no amount of time at the tanners can fix and Rambo's shoulders (which would be great if I were a guy, but I'm not). The beauty of the garden is that my kids will eat almost any fresh veg, although they are rather snobbish on the freshness issue. At a company work party they told the president of my husban's firm not to eat the sweet corn because it was awful. Then they proceeded to explain to him why. Oi, I could have crawled u dee the table.
Dieting is HARD, so is being fat. Choose your HARD.

Spanish tortilla - thinly sliced potatoes baked with eggs, and sprinkled with some cheese on top (I like to use feta and maybe throw on some bits of olive or herbs). Add a salad and dinner is ready. Dal made with yellow split peas and served with roasted cauliflower sprinkled with curry powder, and either warm flour tortillas or some rice.

Place chicken breasts in a baking pan, top with 1 can black beans (rinsed), top with one large jar salsa, top all with shredded reduced fat cheese (go easy on the cheese) and bake just until chicken is cooked through.

I have a big fat veggie garden, so the cheapest meals for my family tend to be vegetarian. One of the easiest is pasta with loaded veggie marinara, especially if I skip the pasta and serve spaghetti squash instead. And let's not forget chili, it's fast, cheap and waistline friendly, it's also versatile, so you can make it with whatever you need for the day, more beans (fiber), shredded carrots (vit a), etc etc.
Dieting is HARD, so is being fat. Choose your HARD.

When my husband and I were first married I bought chicken backs and necks and made chicken and rice casserole. Still my favorite meal even though I can now afford better cuts of meat; even better now that I can buy low sodium cream of mushroom soup and I am learning to substitute Greek yogurt and use brown rice. I really like the stuffed baked potato idea - must try it and sounds like another opportunity to reduce fat by using Greek yogurt..

When I buy a large bag of potatoes I bake half of them in the oven and scoop the middles out. I put the middles in my kitchen aid mixer and add seasoning and maybe a touch of olive oil, or bacon or cheese and low fat yogurt. I put the stuffing back into the skins and freeze them. I can pull out one or two potatoes defrost, heat and serve with a big salad.

I love Tilipia and my kids will eat it too. That's one issue I have had since deciding we all needed to eat healthier, I am spending a lot more at the the store. We did take in the farmers market last week, that was helpful.

Stir Fry Teriaki Chicken with Rice: With a big family and a lot of extra friends frequently joining us for dinner, this is a weekly staple. Make rice (5 cups uncooked brown rice + 6.5 cups of water) in rice cooker. Defrost 3-4 frozen costco brand chicken breast halfs and dice into .25 in. cubes -- saute in olive oil with garlic, add a Tof brown sugar and a T of low sodium soy sauce, ginger and cayenne to taste --reduce and carmelize a bit-set aside. Chop 1 onion, entire head of cabbage, 1 head of broccoli, 1 red pepper, 4 stalks of celery and 1 large carrot into bite-sized pieces -- stir fry for 3-5 minutes in smoking hot canola oil in wok. Add back the chicken and sauce. Serve over rice. This makes approx. 18 servings and is tasty as leftovers for up to 4 days. Keep the rice separate from the chicken & veggies in the fridge.

I can of tuna, 1/2 package Uncle Ben's Brown Rice, 1/2 can black beans, 1 tbsp. Hot Salsa, add cayenne if you like it spicy like I do. Serves 2, if you buy these items on sale, this will cost under $2.00. Always good to add whatever vegetable (or frozen vegetable) was on sale. I keep my average cost per meal at under $1.00 - even so, that adds up to about $40 per week for two - and that is an incredible burden for me. We have the tuna-rice-beans combination for at least 4 or 5 meals a week. Once a week, we have spaghetti (a box of whole wheat spaghetti makes 2 dinners for 2 - average cost: $.25 cents per person per meal plus the sauce - which is also 4 portions at about $.25 cents per person, per meal. That dinner costs $1.00 for both of us. If we found salad for $1.00 per bag, we add that. I have rain checks for it at that price. If I can't get it for $1.00, we don't have it. A bag makes 6 servings. I ONLY buy what is on sale, when I have a coupon or it is really cheap. We do not buy dessert items, snack items, or extras that make costs go up. Food is purely fuel - it is not our friend, and it is not a form of recreation. Trying to eat healthy is one of the biggest burdens in my life. My "favorite" meals are those I get free when we attend a weekly reception where there are refreshments (enough for a full meal!) When I MUST go shopping for food, I am only happy if the receipt shows that I paid under 50% for the amount of food I got. (I usually accomplish that.)

Chili, goulash, spanish rice, Swiss steak, chicken and rice casserole, and shepherd's pie. They're all things you can supplement with veggies (or there are already veggies in them), and they're VERY easy to substitute...brown rice for white, chicken/turkey for beef, vegetarian... they're also all freezeable, or have freezeable ingredients. The other great budget tool, for me? Slow cooker. So little effort, and cheaper ingredients don't matter!

When whole roasting chickens go on sale, I'll buy a couple and cook them both up. I like the SparkPeople sticky chicken recipe... spectacular and low sodium. Then I boil the carcasses and make a big pot of chicken soup. Throw lost veggies (enough for left overs) into the oven to roast with the chicks and you're golden! I can feed the family the entire week for practically nothing.

Beans and rice, hands down. There are so many variations and you can flavor it so differently with herbs and spices. I really like using cumin and coriander, jalapeno, a little salsa, and fresh cilantro. Topped with greek yogurt it's a delicious and filling meal!

When my Grandma H was a young Air Force wife with two children, she made tuna mac: Elbow macaroni, canned tuna (the albacore kind), and Miracle Whip. She served it hot with scallions on the side. That recipe is a family staple and has become comfort food. To make it healthier, I cut the Miracle Whip with plain greek yogurt. My Grandma R used to make mini pizzas with refrigerated biscuits (the small ones), tomato sauce, and pepperoni. She'd bake a whole batch then wrap and freeze the extras for later. To make it healthier, I use veggies instead of pepperoni. This might work with whole wheat english muffins too. I like beans and rice: brown rice with black beans (rinsed and drained) and seasonings such as ground cumin, cayenne, chili powder. The key is to experiment with your favorite dishes. While it may seems boring my favorite cheap meal is mixing canned corn ( no salt added), chick peas, and black beans together. You can put it (with chicken if you like) for on top of salads, in tacos, with rice, and warm it up as well too. It is great with a little ranch or sour cream. I found that it fills me up and tastes awesome. You can even use it with some onion, and tomato as a tortilla chip dip. Another super cheap meal is tuna, whole wheat noodles, and low sodium cream of mushroom soup. It is really filling, and I will pair a salad with it. While this may not seem super cheap have a Blt sandwich. All you need is a little mayo, whole wheat bread, 3 pieces of bacon, lettuce, and tomato for a yummy meal. With a blt I will have canned lite syrup fruit cocktail. Like everyone has said soup is super cheap, and you really can't beat the price. I use tortillas for everything like vegetarian fajitas, quesadillas, breakfast burritos, wraps, and the best thing is they make everything portable. Lastly one of my favorite websites is 100days of real food. She has a ton of ideas just check under 100 days of real food on a budget.

When we are low on cash for the week and I have to invent meals from what we already have and maybe pick up something cheap from the store I end up making Quinoa or Rice with Beans and Salsa. Possibly other veggies if we have them or can find them on sale at the store. But it is a favorite cheap meal for me & my husband, our little boy likes it too. though I would not say it is his fav.

Baked Potato Night. When my father remarried, we went from two kids to five. Even though my step mom worked as well as my dad- it definitely wasn't easy keeping costs down. It was my father's goal to feed each famiy member for two dollars per meal. We started having baked potato night. Giant baked potatoes. HULKING potatoes. The best part was that we had a lot of inexpensive sides to make our potatoes from that could go into other meals during the rest of the week: Cheese Butter Broccoli Carrots Chilli Bacon pieces Sour cream Chives We first thought is was weird to have a meatless meal, but after a few times, we started to enjoy it. Not easy to do with five teenagers ranging from age 12 to 16.

Quesadillas made from any kind of meat in the fridge and some 2% cheddar cheese. Can be baked in oven or fried on the stove. We then can put salsa on them or fresh tomatoes from the garden. Super fast, great way to get left over meat out of the fridge.

Salsa chicken in the crockpot is a really easy and tasty no hassle meal! All you need to do is put the frozen boneless, skinless chicken breasts in the crockpot, pour the salsa over it, and cook on low for about 6 hours. Make rice to serve it over.

Tonight I'm making buffalo chicken egg rolls: Egg rolls (1 pack) $2.45 Chicken (1 pound) $3 Broccoli Slaw (1 12 oz bag) $2.69 Buffalo Sauce (1 bottle) $2.09 The slaw & sauce won't be used up in the dinner, and I'll also use a little shredded cheese already in the fridge. This will make ~20 egg rolls, at roughly 125 calories each. IMO 3 is a decent serving size for me. Picked up a few peaches at $1/pound for a fruit on the side.

Hummus and fresh veggies! Lovely on hot summer evenings. Don't buy in the store- make your own very inexpensively. My recipe: 1/2 c dried garbanzo beans, juice of 1 lemon (or to taste), 1 clove garlic, 1/2 teaspoon salt, 2 Tablespoons extra virgin olive oil. 1 Tablespoon Tahini (sesame paste). Cover garbanzo beans with water and soak garbanzo beans overnight. Next day, drain off water, place in pot with fresh water and 1/2 teaspoon salt. Cook 45 min-1 hour. Reserve cooking water. Place cooked garbanzo beans, lemon juice, garlic, additional 1/2 teaspoon salt, extra virgin olive oil and tahini in blender. Add enough reserved liquid from cooking the beans to get desired consistency. You may also add cumin or cayenne, if desired. This is enough for 2 people. We like the warm hummus with chilled veggies, but you can make it ahead and chill. Most olive oil labeled 'extra virgin" is fake. If you have a dollar store near by, I'd recommend getting all your canned veggies and beans there, plus condiments and sauces. Then go to the regular market and buy a huge frozen bag of chicken. Grilling chicken after marinating it over night is so delicious. I never get tired of it. Make a bean and veggie caserole and everyone will love it. I love the dollar store.

I'm going to emphasize the beans. They are full of protein, and so economical. It's meat that is the costliest part of dinner, so if you use beans instead, it cuts down your cost by half. I like making black bean burgers with sweet potato wedges, or falafel in a pita with taziki sauce. My kids also love roasted red pepper and goat cheese sandwiches. I make those with a salad, and it's delicious.

I make a lot of homemade chili- with dried beans and little to no meat. My meat loving husband is a fan! It takes a long time to make, but not a lot of that time is 'hands on'- you soak the beans overnight, and cook everything in a crock pot for about 8hrs on low. I normally just throw in some cans of tomato paste and crushed tomato, a chopped onion and a bunch of spices. I only buy organic milk, which gets expensive, so every other week I substitute soy milk or almond milk. It works for coffee and cereal, and has good nutritional value while being a little less expensive. The person who said to grow your own garden is so smart! I wish I had land for it! Plants grow largely on their own if you plant them outside, even by seed, which is very cheap. You can also grow herbs and peppers very easily, even indoors.

I generally buy the frozen 10 pounds of chicken for about $5.00, boil it up and split it into three or four meals. Tacos, enchiladas, chicken pot pie, chicken noodle soup, chicken and rice! I try and make the chicken stretch by mixing it with something such as veggies, rice, potatoes, etc.
